Junamiso..

Japanese Homecooking..

Junamiso is very easy to make.

1) Insert amount of water based on how much you want into pot.

2) Add several sprinkles (about 1 pinch per serving) of MSG (Aginomoto) This is called the "dashi". Heat to a boil. Add seaweed (sold dried in a bag. Not too much as they expand) also to add to the dashi taste.

3) Insert chopped vegetable into bite size pieces. use onions, sui choy, potatoes (put in last as they will dissolve if left in too long), daikon or any other veggies you like. Use crisp green/white veggies that taste good boiled.. Don't recommend leafy veggies such as lettuce. Other veggies such as carrots will affect the taste. Green veggies are mostly water so will not affect the taste.

4) Lower heat to medium and let simmer until veggies are cooked.

5) Add miso last. Lower heat to low and mix until miso is dissolved.

6) Simmer on low for about 5min.

7) You can add tofu, green onions at the end also.

Basically, you need to do a taste test to your liking of how much miso to put in. When doing the taste test, make sure to cool the sample miso soup before you taste it as when the soup is hot, it may not have as much flavour as when it is cooled.

You can buy the miso paste at most stores. There are many types of miso but all are basically the same. Some miso now include "dashi". If you buy one of these, please do not add the MSG.
